History & Local Story
The modern burger is believed to have grown out of the Hamburg steak tradition in Germany—minced meat patties that later got sandwiched inside bread buns in the United States. Over the 20th century it became the face of American fast food.
When burgers came to India, taste and ingredients changed quickly. Many people preferred vegetarian options, so the aloo tikki burger became a hero: spiced potato patty inside a bun, with mayo, ketchup and salad. Roadside carts, college canteens and small cafés picked it up and gave it their own twist with extra masala, cheese slices and special sauces. Today, burgers range from basic roadside versions to gourmet, but the desi aloo tikki burger is still a favourite.
